Nutty Cinnamon Quinoa Breakfast Bowl

Nutty Cinnamon Quinoa Breakfast Bowl

 

Serves 4

 

Ingredients:

1 cup quinoa (thoroughly rinsed)

2 cups water

1 teaspoon cinnamon

1 cup blueberries (or other desired berries)

1 cup strawberries (or other desired berries)

1/4 cup chopped walnuts, almonds (or other desired RAW nuts)

1-2 tbsp coconut or almond milk

 

Directions:

Combine Quinoa and water in a sauce pan bring to a boil, cover and reduce to medium heat for 15 minutes or until all liquid is absorbed.

Transfer cooked quinoa into 4 bowls.

Add coconut or almond milk a little at a time until desired consistency.

Stir in cinnamon and berries. (I use frozen berries, it cools the quinoa quickly so I don’t have to wait!)

Sprinkle with nuts!

 

Eat and enjoy!!!
